  • - 20 grams of unsweetened cocoa;
  • - 20 grams of flour;
  • - 2 eggs;
  • - 70 grams of sugar;
  • - 50 grams of condensed milk;
  • - 100 grams of mascarpone cheese;
  • - 50 grams of dark chocolate.

Instructions

Step 1

First, prepare the dough. For this, 1 egg and 1 yolk are beaten with 60 grams of sugar. The mass should turn into a thick lush foam and increase in volume by about 2 times. Then flour and cocoa are added to the mass. It is best to stir the dough with a wooden spatula, moving gently from top to bottom. The remaining protein is beaten with 10 grams of sugar until smooth, snow-white foam, and then gently added to the dough. During the mixing process, the mass should not fall off.

Step 2

The baking sheet is covered with special baking paper. The dough is poured onto it, leveled, and then baked for 10 minutes in a carefully preheated oven. The finished biscuit is removed from the baking sheet, peeled from paper and cooled. It should be noted that baking times may vary depending on the oven.

Step 3

While the finished biscuit is cooling, it is necessary to prepare the cream. For this, condensed milk and mascarpone are whipped with a mixer at a slow speed until smooth. The biscuit is cut into 2 equal parts in the middle and carefully coated with the resulting cream. Then the cakes are sent to the refrigerator for 20-30 minutes for soaking.

Step 4

After the specified time, the biscuit is cut into several cakes. It remains to grease the top of the finished dessert with chocolate melted in a water bath. To make the icing crisp, immediately after smearing the cakes must be put in the refrigerator for 15-20 minutes.
