Instructions

Step 1

Wash the pork (neck or ham) and dry it with a paper towel. It is better to use the fillet chilled, as the dish will turn out to be less aromatic from frozen meat. We cut the meat "accordion" across the direction of the fibers. The pieces should not be wider than 3 centimeters. Rub each piece with salt and spices, and sprinkle with ground coriander on the outside. Leave the meat to marinate for 2-3 hours.
