Step 1
Wash the trebuha well and cut into strips about 5 cm long. Put in a saucepan and cover with cold water. Bring to a boil, descale, drain. Pour clean water, add salt, bay leaf, pepper, and cook the tripe for 3-4 hours over low heat. If you cook the product in a multicooker or pressure cooker, then the cooking time can be reduced to 2-2.5 hours. At the end of cooking, the scar should be soft and easy to cut with a knife.
Step 2
Peel the champignons and cut into large cubes, chop the red onion into thin half rings, fry everything in olive oil until golden brown.
Step 3
Add the prepared tripe, soy sauce, garlic, cilantro, pepper mixture to the vegetables and simmer for 10-15 minutes.
