    • 300 g minced pork

    • 1 tablespoon Worcestershire sauce
    • 2 teaspoons Dijon mustard

    • 1 tablespoon vegetable oil
    • 1 tablespoon flour

Step 1

Mushroom cutlets

Peel the onions, rinse, dry and cut into small cubes. Set aside 2 tablespoons for the filling. Cut off the crust from white bread and soak it in milk, wait until most of the milk is absorbed. In a large, deep bowl, combine chopped onions and ground meat.

Step 2

Take out the milk-soaked white bread and in a small bowl toss it with Worcestershire sauce, tomato paste, and Dijon mustard. Beat two eggs lightly and place in this mixture. Add the whole mass to the minced meat, salt and pepper, mix and beat well. To do this, take the cutlet mass out of the bowl and throw it vigorously over the bottom of the dish. Repeat this procedure 15-20 times, so the minced meat will be juicier and keep its shape better.

Peel and dry the mushrooms. Cut into small cubes. Heat vegetable oil in a frying pan, fry the onion until transparent, add mushrooms, over medium heat until the liquid evaporates, add flour and fry everything until golden brown. Refrigerate.

Preheat oven to 200C. Grease a baking sheet. Scoop up the minced meat, put some mushroom filling in the middle, shape the patties and place them on a baking sheet. Bake the patties until golden brown, about 45-60 minutes.

Grind the chicken in a food processor. Soak the bread crumbs in the cream. Chop the garlic finely. Peel the onion and cut into small cubes. Rinse the herbs, dry and also chop. Combine the soaked crumbs, herbs, onion and garlic with minced meat, salt, pepper and beat.

Step 6

Wash the chanterelles, dry them, chop large mushrooms, small ones - cook whole, fry in melted butter until golden brown. Refrigerate. Shape the patties and put the filling inside. Heat a frying pan, heat the oil, fry the patties over high heat until golden brown on both sides, reduce heat, cover and simmer over low heat for 20-30 minutes.
