Fresh strawberry mousse with yoghurt
On average, it takes about 30 minutes to prepare strawberry mousse, but before serving, the dessert must be chilled in the refrigerator for at least 3-4 hours. The most delicate berry dessert is designed for 4 servings.
For cooking you will need:
- 300 g fresh or frozen strawberries;
- 250 ml natural yogurt with vanilla;
- 1 teaspoon lemon juice
- 12 g gelatin;
- 200 g cream;
- 80 g of sugar.
Step-by-step instruction:
- Fill the gelatin with cold water for 15-20 minutes.
- Sort fresh strawberries and rinse thoroughly, remove all stems and leaves. If you are using fresh frozen berries, then first give it the opportunity to thaw a little.
- While the gelatin swells, grind the washed berries with a blender and gently mix with lemon juice, sugar and vanilla yogurt.
- While gently stirring, slightly heat the gelatin until completely dissolved. Strain the swollen gelatin through a sieve and mix gently with the berry mass.
- Cover the resulting mixture with cling film and place in the refrigerator for 10-15 minutes. Please note that the strawberry mass should thicken a little, but not completely freeze.
- Gently transfer the whipped cream to the slightly hardened berry mass and gently stir from bottom to top with a pastry spatula. Try to stir the cream with the strawberry yoghurt mixture as gently as possible. The more carefully you act, the softer and more airy you end up with the finished mousse.
- Spread the resulting mass on dessert plates and refrigerate for 3-4 hours (if desired, you can leave it overnight). Decorate beautifully with large strawberry wedges or mint sprigs before serving.
Strawberry mousse with yogurt belongs to low-calorie desserts, so this recipe is great even for those who carefully monitor their figure and try to limit themselves as much as possible in both sweet and fat. A large amount of berries and natural yogurt will only benefit your figure and your health.
English dessert from strawberries "Eaton Mess"
The widespread strawberry dessert in the UK is based on egg whites. The simplest recipe includes only 4 ingredients:
- strawberries - 600 g;
- cream with a fat content of at least 30% - 450 ml;
- ready-made meringues of medium size - 8 pieces;
- icing sugar or vanilla sugar - 20 g.
Cooking instructions:
- Wash the strawberries and remove the stalks. Cut the berries into large wedges.
- Whisk the pre-chilled cream with a mixer until fluffy, dense foam. Try to whip the cream slowly at first, gradually increasing the mixer speed from minimum to medium. The whipping process should last no more than 5-7 minutes. If you want to sweeten the cream, add a little caster sugar or vanilla sugar while whisking. To avoid clumping, add the powder or sugar to the cream gradually.
- Crush the meringue with your hands into small pieces and toss gently with the whipped cream. Take nice glasses and lay out whipped cream and meringue and sliced strawberries in layers. The topmost layer can be decorated with a strawberry cut in half and a mint leaf. Dessert is ready to serve! Bon Appetit!
