A very simple Spanish recipe for stuffed peppers with rice, chicken and vegetables will help diversify the menu. The dish turns out to be tasty, satisfying, very healthy, but not too high in calories. It is suitable even for those on a diet.
It is necessary
- Ingredients for 2 persons:
- - 2 red peppers, medium;
- - 100 gr. rice;
- - half a chicken breast;
- - 100 gr. any favorite vegetables;
- - olive oil;
- - 330 ml vegetable or chicken broth;
- - salt and pepper.
Instructions
Step 1
Peppers need to be washed and peeled. Cut off the top of the pepper, but do not discard it, since it will serve as a lid for us. We put the peppers in the mold.
Step 2
In a frying pan, fry the chicken breast, cut into small pieces, along with vegetables. As soon as the juice appears, add the rice. Fry until the pieces of vegetables and chicken are golden brown. After that, pour in the broth, salt and pepper, reduce the heat and let the vegetables, chicken and rice stew for 10 minutes.
Step 3
We shift the filling into the peppers, close them with "lids", send them to the oven preheated to 180C for 40 minutes.
Step 4
