Hearty and flavorful pumpkin, herb and meatball soup is a light lunch or dinner for the whole family. Note that broth and meatballs can be prepared from both chicken and beef. That being said, both options will be very good.

It is necessary

  • For the meatballs:
  • • 1 chicken breast (or 0.3 kg of beef shoulder);
  • • 2 tablespoons of bread crumbs;
  • • ½ bunch of parsley;
  • • 1 egg;
  • • ½ bunch of dill;
  • • salt and black pepper.
  • For soup:
  • • 300 g pumpkin;
  • • 1 onion and 1 carrot;
  • • 2 stalked celery;
  • • 5 sprigs of thyme;
  • • 1 pinch of peppercorns;
  • • 2-3 peas of allspice;
  • • 2 carnations;
  • • 1 leek (12-15 cm long).

Instructions

Step 1

Take either chicken or beef. Rinse it and separate it from the bones. Chop the bones, put in a saucepan with water and bring to a boil.

Step 2

Peel the carrots, celery and onion, wash, add to the boiling broth. Reduce heat to low and simmer the contents of the pan for 1-2 hours. At the end of cooking, season the broth with cloves, allspice and black peppercorns. Cook for another 10-15 minutes, then remove from heat and strain.

Step 3

Rinse the parsley and dill, wait for the water to drain and chop with a knife.

Step 4

Grind the meat with a meat grinder, mix with salt, pepper, herbs and a raw egg. Sculpt medium-sized meatballs from the minced meat, place them on a wooden plank and place in the refrigerator.

Step 5

Wash the pumpkin, remove the seeds and peel, cut into cubes. Just finely chop the leek.

Step 6

Pour the strained broth back into a saucepan, place on fire and bring to a boil. Put the pumpkin cubes in the boiling broth, boil and cook the contents of the saucepan, slightly reducing the heat.

Step 7

After 15-20 minutes, add the meatballs and thyme to the pumpkin, boil again and cook until the meatballs float up. Then add the leeks and cook until all ingredients are cooked.

Step 8

Turn off the prepared soup with meatballs and pumpkin, cover, leave for 10-15 minutes. Then remove the thyme from the pan and discard, and pour the soup into bowls, garnish with fresh thyme and serve.
