Onion pie has long been a hallmark of French cuisine, along with onion soup, classic julienne and foie gras. Its origin is shrouded in romantic legends, it is one of the most widespread types of breakfast around the world, and at the same time it has earned the love of Russian gourmets.

It is necessary

  • For the test:
  • - 250 g butter;
  • - 2 cups of flour;
  • - 1 egg;
  • - a pinch of salt;
  • - 20 g of vegetable oil.
  • For filling:
  • - 3 large onions (better than white onions);
  • - 100 ml cream 20% fat;
  • - 150 g parmesan cheese.
  • Silicone mold with a diameter of 29 cm with a high side
  • Frying pan with high sides
  • Cling film

Instructions

Step 1

Peel and rinse the onion thoroughly. It is better to use white onions, which are sweeter than onions. However, the choice of the variety is more a matter of taste, the pie with any onion will turn out to be delicious. The onions are cut into half rings 1 mm thick.

Step 2

Heat vegetable oil in a skillet and add onion. Fry over low heat until golden brown. The onion itself should be cooked until half cooked, since it will be baked in front of it without a “hat” in the oven.

Step 3

Place the butter in a bowl and knead it with your hands. Add an egg and a pinch of salt, then knead again. Then flour is introduced in small portions, after which a homogeneous dough is kneaded.

Step 4

Roll the dough into a ball, cover the bowl with cling film and refrigerate for half an hour.

Step 5

Grate the parmesan on a fine grater. Add cream and mix thoroughly.

Step 6

Rub the form with butter, then evenly distribute all the dough over it, taking into account the side, about 2 cm in height. Spread the resulting onion evenly over the surface of the mold. The final layer is the fill. It must be poured over the entire surface so that the grated cheese covers the cake in an even layer.

Step 7

Preheat the oven to 150 degrees. Bake the pie for half an hour. You should check the readiness with a toothpick - if the bottom is not baked, add 5 minutes of baking at a temperature of 100 degrees.

Step 8

Onion pie can be served both hot and cold with tea or berry juice.
