Fennel and celery salad is a very tasty and aromatic dish, and also healthy. Fennel improves digestion by preventing flatulence. It promotes weight loss, speeds up the metabolic process. In addition, celery has a rejuvenating effect, fills the body with energy.

- - 1 fennel tuber;
- - 3 stalks of celery;
- - half a lemon;
- - 2 tbsp. tablespoons of olive oil;
- - 1 tbsp. a spoonful of apple cider vinegar;
- - 1 teaspoon of honey;
- - ground pepper, salt.

Step 1
Peel the celery and fennel stalks, rinse thoroughly, and chop finely. Cut half the lemon into quarters and squeeze all the juice out of them into a salad bowl. Put quarters of lemon there, add a little water, put a few ice cubes.
Step 2
Put prepared fennel with celery in acidified water, leave to infuse for 10 minutes.

Prepare a light salad dressing separately. To do this, mix apple cider vinegar with olive oil, honey, ground pepper and salt.
Step 4
Drain the lemon water from the fennel and celery, take out the quarters of the lemon - we no longer need them. Pour vinegar dressing over the fennel, cover with cling film. Refrigerate the fennel salad for at least one hour.
Step 5
Serve the prepared salad on portioned plates, you can add fresh parsley to it.
