Bread is the head of everything. Everyone knows this saying from childhood. What a big place it occupies in our diet, what a storehouse of vitamins and nutrients it is! But only if it's made with the right ingredients.
It is necessary
- First, we prepare the leaven (if you don’t want to make a leaven, you can buy it in stores that deal with "eco" goods). For this we need:
- Hop cones - 2 tablespoons
- Water - 150 gr
- Sugar - 0.5 tsp
- Flour

Step 1
Mix the ingredients and simmer for 40 minutes. Then we leave to infuse for 6-8 hours. Then we filter and squeeze the resulting raw materials. You should have about 80-100 grams of dark brown liquid. Divide into 2 halves. In one half, add 0.5 teaspoon of sugar and flour until the consistency of thick sour cream. We leave the resulting mixture for a day in a warm place (just not on the battery). By the end of the day, the leaven should ferment and bubbles will appear in it. Add the remaining half of the infusion (after adding sugar and flour) to the leaven and leave it again for a day. The leaven is ready.
Step 2
To make 1 loaf of bread, we need:
Glass of water
Flour -3 cups (if you want white bread, then white flour, premium, if rye, then you will need 2 glasses of white and a glass of rye flour)
Salt - a teaspoon
Bran -2 tablespoons
Wheat germ flakes - 2 tablespoons
Sourdough -2-3 tablespoons
Sunflower oil - 1 tablespoon.
We put the dough. Pour a glass of water into an enamel pot (preferably not boiled). Add salt, 2-3 tablespoons of sourdough. Stir until smooth. We put the bran and flakes. Then a glass of pre-sifted flour. Stir well again. Cover the pan and set for 8-10 hours. During this time, the dough should increase and bubbles will appear in it. It is more convenient to do this at night. Then in the morning you can immediately bake bread.
Step 3
Add a tablespoon of butter and 2 cups of flour to the finished dough. Knead well until smooth and transfer to a greased form. If there is no form, then just make a bun and put it on a baking sheet. So that the crust does not dry out while the dough rises, sprinkle it with water and leave it for 1-1.5 hours so that the bread doubles in volume. And then we put the approached dough in an oven preheated to 180 degrees for 45-60 minutes, depending on how brown you like the bread. We take out the finished bread from the oven, wrap it in a towel and leave it for half an hour to reach it.
