It is necessary

  • - aquafaba - 60 ml;
  • - honey (or other sweetener) - 2 tablespoons;
  • - soda - 0.5 tsp;
  • - coconut flour - 1-1, 25 cups;
  • - rice flour - 0.25 cups;
  • - vegetable oil - 3 tbsp.
  • - water - 40 ml.;
  • - pear - 2 pcs;
  • - glaze (1 tbsp honey + 1 tsp cocoa powder) - optional.

Step 1

The most mysterious ingredient is aquafaba. But this is just the kind of liquid that can be found in a jar of canned beans. Just a few years ago, the amazing quality of this liquid was discovered - it has the same properties in cooking as egg white. To make a pie with pears, you need 60 ml of aquafaba. This is liquid from a 500 ml jar of white canned beans. To get aquafaba, it is enough to substitute a bowl under a colander and pour the contents of the jar into a colander. Pour the liquid that drains into a bowl into a measuring cup. Bring up the volume of liquid to 100 ml with cold water.

Pour the aquafaba and water into a tall container, add baking soda and honey. Any other sweetener can be used in place of honey. Beat with a mixer until a thick foam forms. Pour in the oil and whisk again until the liquid is smooth.

Step 3

Pour the resulting liquid into a bowl, add the entire volume of the rice flour, stir and gradually add the coconut flour. The finished dough is crumbly, but at the same time quite plastic.

Place the dough on a baking sheet lined with baking paper. Blind an oval or round cake of small diameter, 1-2 cm thick and with sides no higher than 3 cm.

Preheat your oven to 165-170 degrees and place the baking sheet with the base of the pie in it for 7 minutes.

Step 5

Meanwhile, wash and dry the pears, cut each in half, and use a teaspoon to remove the cores and hard fibers. Cut into slices across the fruit.

Step 6

Remove the baking sheet from the oven and place the pear wedges on the base of the pie. Raise the oven temperature to 180-190 degrees. And bake the cake for 15 minutes.

Step 7

Pour the finished cake, if desired, with a glaze made from a tablespoon of liquid honey mixed with a teaspoon of cocoa powder. And sprinkle with coconut flour or coconut flakes. When the pie has cooled completely, it can be portioned and served.
