- 1 kg of mackerel
- 50-70 gr. bacon,
- 2-3 pcs. medium-sized porcini mushrooms,
- 30 gr. ginger root,
- 1 bunch of green onions
- 1 lemon
- coarse salt, black ground pepper, clove powder, 2-3 rosemary leaves.
- 2-3 st. l. vegetable oil,
- 1-2 tsp Sahara,
- 1 tbsp. l. soy sauce,
- 1 PC. lime,
- ground black pepper, clove powder, 2-3 rosemary leaves.
Gut the mackerel, wash and dry, do not cut off the head. Peel and grate the ginger and mix with coarse salt, pepper, clove powder and rosemary. Grate mackerel carcasses with this mixture and leave for 30 minutes at room temperature.
In a separate bowl, prepare a marinade from soy sauce, vegetable oil, juice of one lime, sugar and spices. Grate the mackerel carcasses again with this marinade.
Finely chop the mushrooms, chop the green onion, cut the bacon into cubes, mix everything and fill the mackerel carcasses with this mixture. Cut the lemon into circles and place the mackerel in the belly.
Gently place the mackerel on a baking dish and place in a preheated oven to 180 degrees for 30-40 minutes. Water the mackerel periodically with the remnants of the marinade.
For garnish, you can serve red onion rings marinated in lime juice with honey and spices.
