  • 1 bay leaf;
  • 1 tbsp. l. vegetable oil.

The sequence for preparing the first course is as follows:

  1. Rinse the peas in hungry water, then pour the clear liquid into a deep dish and soak the peas there overnight.
  2. Use the pot in which you plan to cook your vegetarian soup. Pour vegetable oil into the bottom of the container.
  3. Peel the head of the onion, chop it as small as possible, put it in a saucepan and fry in oil until transparent.
  4. Peel the garlic, chop it finely with a knife, send the chopped vegetable to the pan to the onion. Sauté the garlic and onion together, stirring constantly, for 1 minute.
  5. Pour vegetables with water, add soaked peas to a saucepan, add lavrushka, salt and spices to taste.
  6. Boil the contents of the saucepan, then reduce the heat to low and cook the peas with vegetables for 1 hour.
  7. Wash the carrots, peel, cut into thin slices, send to the pan.
  8. Peel the potatoes, cut into small cubes, add to the other ingredients.

If you want to speed up the veggie soup process, use a can of canned green peas instead of yellow peas. With this change, you will need to boil the garlic, onions and peas for a quarter of an hour, and then add the remaining ingredients to the pan.

Soup made from canned peas is recommended to be mashed with a blender before serving. The dish will acquire a delicate taste.

Vegetarian Lentil Soup

Vegetarian soups are often made with legumes. In addition to peas, lentils can be used to create a delicious dish.

To make a delicious vegetarian lentil soup, use the following foods:

  • 200 g lentils (brown);
  • 1 liter of water;
  • 1 large onion;
  • 1 large carrot;
  • 2 garlic cloves;
  • 1 tbsp. l. ketchup or tomato paste;
  • ¼ Art. l. oils (choose to your taste: either olive or sunflower);
  • 2 leaves of lavrushka;
  • Seasonings to taste.

A vegetarian lentil soup is prepared as follows:

  1. Add lentils to a saucepan. Fill the product with water so that the liquid rises 2-3 cm above the lentils. Place a saucepan on gas, boil the contents, cook the bean culture for 10 minutes, then put it in a colander.
  2. Pour oil into the container that you chose for making the soup, put the container on low heat.
  3. Wash the carrots, remove the peel, grate on a fine grater.
  4. Remove the husk from the onion, cut into smaller pieces.
  5. Peel the garlic, pass through a press.
  6. Send the prepared ingredients to a saucepan with butter. Fry the vegetables, stirring constantly, over low heat for 5-7 minutes.
  7. Pour lentils into a saucepan, add spices to taste, put bay leaf, fill ingredients with water.
  8. Boil the soup, then reduce the gas, cover the pan with a lid and cook for 10-15 minutes.
  9. Put the tomato paste in the soup, stir the contents of the pan, cook the first 35-45 minutes. The dish is ready when the lentils are cooked.

Serve the lentil soup warm. It is not recommended to store the dish in the refrigerator, as the soup becomes thick. If, nevertheless, you sent the stew for storage in the refrigerator, and it thickens, then add water to it and boil.
