Seafood kebabs

Ingredients:

  • large shrimps;
  • scallops;
  • bacon;

  • bell pepper;
  • a mixture of herbs;
  • lemon juice;
  • soy sauce;
  • olive oil.

Peel the seafood, rinse under running cool water and marinate in a mixture of herbs (you can use Provencal or Italian). Add arbitrary proportions of lemon juice, soy sauce and olive oil. Mix everything thoroughly and leave in the refrigerator for several hours. It is best to prepare the seafood in the evening and leave it to marinate overnight.

Moisten wooden skewers with water (this is necessary so that they do not burn when cooking a kebab). On skewers, string a scallop wrapped in bacon, then shrimp, a piece of mushroom, cherry tomato, and so on.

Grill over coals, placing the kebabs on the wire rack and turning them periodically. Cooking time is approximately 10 minutes.

Grilled squid

To prepare this dish you will need:

  • squid - 0.5 kg;
  • zucchini - 100 g;
  • onions - 100 g;
  • garlic - 2-3 cloves;
  • egg - 1 pc.;
  • flour - 2 tablespoons;
  • parsley;
  • pepper and salt to taste.

Clean the squids under running water, separating the film, entrails and chord. Rinse them thoroughly.

Prepare your vegetables. Peel the onion, zucchini and garlic and cut into small pieces. Season the vegetable mixture with salt and pepper and simmer in a saucepan with a little oil for 5 minutes. Wash the parsley, shake it off to remove excess water and finely chop the herbs.

Cool the stewed vegetables. Mix with raw egg, herbs, flour and mix everything thoroughly. Stuff the squid with the resulting mass. Place them on a wire rack and fry, turning constantly, over charcoal until golden brown.
