Chicken stuffed with rice is one of the most popular New Year's dishes. Moreover, many families have their own "chips" for the preparation of this dish. For example, options with apples, potatoes, and so on. But if you like to experiment, try baking chicken and rice in a less traditional way. And then, perhaps, the whole coming year will be full of surprises. After all, it is not for nothing that there is a saying "As you celebrate the New Year, so you will spend it."
It is necessary
- - chicken carcass - about 1.5 kg;
- - rice - 150 g;
- - dried raisins (raisins) - 30 g;
- - lard - a few pieces;
- - tangerines - 2 pcs.;
- - fresh rosemary - 3 branches or dried - 1 tbsp. l.;
- - seasoning for pilaf - 0.5 sachets;
- - a mixture of peppers (black ground pepper and hot red pepper);
- - salt;
- - foil;
- - baking sheet.
Instructions
Step 1
First you need to prepare the filling. Rinse the rice several times until the water is completely clear. After that, pour it into a saucepan, put the raisins, which you also need to rinse, and pour in cold water in a 1: 1 ratio. Bring to a boil, add a few pinches of salt and pilaf seasoning. Cook until the rice is almost cooked, remaining slightly undercooked.
Step 2
Rinse the chicken carcass under running water, dry and rub with peppers, salt and rosemary inside and out. If using dried rosemary, simply add it to the pepper and salt mixture. If fresh, then it needs to be chopped and mixed with seasonings.
Step 3
Peel the tangerines and divide into wedges. After that, start the chicken carcass with rice with raisins and tangerines, alternating them according to the scheme: a little rice, a couple of tangerine slices, rice again, then tangerine and so on in a circle. When the chicken is full, sew up the hole with cooking thread (you can use regular thread with a needle).
Step 4
Place foil on a baking sheet and place the chicken breast side up. Put slices of bacon on top or attach to the carcass with toothpicks. Preheat oven to 180 degrees. Wrap the chicken wings and legs in foil to keep them dry and place the baking sheet in the oven for 1 hour.
Step 5
After 20-25 minutes, the bacon will need to be removed and pulled out. Pour the fat over the chicken 10 minutes before the end of the cooking time. Bake until golden brown.
Step 6
Transfer the finished meal to a large dish, having previously freed the carcass from the thread, and garnish with fresh herbs or lettuce leaves.
