- -4 chicken legs
- -3 tablespoons olive oil
- -Salt and freshly ground black pepper
- -1 small onion, diced
- -2 medium cloves of garlic, chopped
- -1 tablespoon thyme leaves
- -1 small Italian eggplant
- -1 medium zucchini
- -1 tomato
- -1/2 cup homemade chicken stock
- -1/2 cup fresh basil leaves, chopped
- - Grated Parmesan for serving
Instructions
Step 1
Sprinkle salt and pepper on all sides of the chicken.
Step 2
Heat 2 tablespoons of oil in a skillet over medium-high heat. Lay the chicken skin side down and cook until browned well (6 to 7 minutes). Then, turn over and grill for 5 minutes longer. Transfer the bird to a plate and set aside.
Step 3
In the same skillet (from step 2), add an extra tablespoon of oil and heat over medium heat. Add onions and a pinch of salt. Simmer for about 1 minute. Then, season with garlic and thyme and cook until aromatic for about 30 seconds.
Step 4
Wash the vegetables and cut into small pieces.
Step 5
Dip eggplants, tomatoes, zucchini and pumpkin with onions into the pan. Stir. Gently place the chicken pieces (from step 1) in the sauce and simmer for 10-20 minutes until golden brown.
Step 6
Season to taste with salt and pepper, sprinkle with basil and grated Parmesan. The dish is ready to serve!
