    • 3 eggplants;
    • 2 tomatoes;
    • 1 onion;
    • 300 g minced meat;
    • 200 g of hard cheese;
    • basil sprigs.

Step 1

Rinse the eggplant under running water and pat dry with a paper towel. Slice each eggplant in half lengthwise. Remove the pulp with a spoon, chop it and place in a deep bowl. Pour the resulting eggplant boats with salted hot water for 30 minutes. Then take the eggplants out of the water and wrap them in a paper towel to absorb all the moisture.

Step 2

Peel the onions and chop with a knife. Heat 2-3 tablespoons of sunflower oil in a frying pan and place the chopped onion on top of it. Saute the onions until golden brown, then add the minced meat and chopped garlic clove. Mash the minced meat with a fork so that there are no lumps. Season with salt and pepper to taste. Fry the minced meat over high heat for 2 minutes, stirring occasionally, then add a little boiled hot water and cover. Cook for another 5-7 minutes, until all the moisture has evaporated.

Step 3

Pour boiling water over the tomatoes and peel them off. Cut the tomatoes into small cubes and add to the chopped eggplant pulp. Put the fried minced meat there. Rinse a few sprigs of fresh basil under water, dry and chop finely. Add to the filling and mix all ingredients thoroughly. Grate the cheese or grind it in a blender and put it in a separate cup, you will need it later.

Step 4

Place the filling carefully on each eggplant boat. Place the prepared stuffed eggplants in a baking dish greased with vegetable oil and place in an oven preheated to 180 degrees. Bake the dish for 40 minutes. Then carefully remove the eggplant dish from the oven, sprinkle each eggplant on top with grated cheese and place in the oven for another 10 minutes.

Step 5

Remove the prepared stuffed eggplant from the oven and place on a flat dish decorated with lettuce leaves. Serve hot. Bon Appetit.
