At any time of the year, and especially in winter, sometimes you really want a hearty, thick soup with a bright taste and aroma. We bring to your attention such a soup - rich, fragrant. In winter, you can add cracklings to it, and in the warm season, cook it only from vegetables. In addition, this soup can be eaten during fasting.

It is necessary

  • - Potatoes - 4 pcs.;
  • - Onion-turnip - 1 pc. (large);
  • - Carrots - 1 pc.;
  • - Sauerkraut - 150 g;
  • - Tomatoes - 1 pc.;
  • - Leeks - 50 g;
  • - Bacon (or smoked bacon) - 100 g;
  • - Celery and parsley root - half each;
  • - Salt, pepper, sour cream - the taste;
  • - Vegetable oil - 2 tablespoons

Instructions

Step 1

To make the soup, we need a heavy-walled saucepan. We will heat oil in it.

Step 2

Peel the onion (half) and leek, rinse and cut into cubes.

Step 3

Fry 2 types of onions in hot oil for 3-5 minutes.

Step 4

Peel the carrots (half), celery and parsley roots and chop in the same way as the onion. Add to the onion and fry for 10 minutes.

Add water to the vegetables, about 2 cups. You can add a peeled and chopped tomato at this stage.

Step 6

Season the broth with spices, salt, put the bay leaf and cook for another 20 minutes.

Filter the finished broth and cool.

Let's start preparing the actual soup. Peel and dice the potatoes, remaining carrots and onions.

Fry all these vegetables in a little vegetable oil. Add the previously prepared broth; the vegetables should be covered with it.

Grind the finished vegetables with a crush until puree with small pieces.

We wash the sauerkraut under cold water and put it in a colander. Add to soup and stir.

We bring the soup to taste with spices and salt.

If we are preparing a lean soup, then it remains to add only greens and everything is ready. If not, then we need to fry the bacon in a dry frying pan to the state of cracklings and dry them on a napkin.
