Beef stroganoff was invented in Russia in the 17th century. In this version, the dish turns out to be just wonderful. Superb tender beef, fluffy and crumbly rice, spinach, delicious cream sauce, all in just 30 minutes.
It is necessary
- - 400 g of beef tenderloin;
- - 1 tbsp. basmati rice;
- - 150-200 g of spinach;
- - 200 g of pickled cucumbers;
- - 300 g of champignons (or assorted mushrooms);
- - 2 heads of red onions;
- - 4-5 st. spoons of sour cream;
- - 100 ml brandy;
- - 1 bunch of parsley;
- - 2-4 cloves of garlic;
- - 1 teaspoon of ground paprika;
- - olive oil;
- - thyme, pepper, salt.
Instructions
Step 1
The first step is to cook the rice. To do this, pour 1 tbsp into a deep saucepan. rice and cover it with 2 tbsp. water, add salt and a little thyme. Thyme goes well with beef and mushrooms. After boiling, let the rice cook over medium heat for about 10 minutes.
Step 2
Now you can do the meat dressing. Cut the pickled cucumbers into thin slices or strips, and cut the onions into rings. You can use a food processor to do this.
Step 3
Place cucumbers and onions in a bowl and cover with cucumber pickle (100-150 ml is enough). Salt the mixture, add coarsely chopped parsley to it.
Step 4
Cut the mushrooms into large slices. Pour 2 tbsp into the pan. l. olive oil and place the mushrooms there. Add the garlic, squeezed through the garlic, simmer for 3-4 minutes, stirring constantly.
Step 5
Add 3/4 of the onion and cucumber mixture to the mushrooms (squeeze the excess juice from the mixture first). Mix everything well and simmer for another 5 minutes. The beef Stroganoff base is ready.
Step 6
Remove all fat from the tenderloin and cut into strips about 1 cm thick. Season with salt and pepper, add paprika. Spread the spices evenly over the meat.
Step 7
Transfer the mushrooms and the onion-cucumber mixture temporarily from the skillet to a bowl. Pour 2 tbsp into the same pan. tablespoons of olive oil and put the strips of beef there. Spread the meat evenly over the surface of the skillet to broil rather than stew. Fry the strips for about a minute on each side.
Step 8
Pour the brandy into the skillet and light it. After about half a minute, the alcohol will evaporate and you can lay mushrooms and onions. Mix everything well and add sour cream. If the sour cream is too thick, dilute it with 50 ml of water. Let the mixture simmer for a few minutes.
Step 9
Place spinach in a saucepan with cooked rice, cover with a lid and leave to simmer for 5-7 minutes.
Step 10
Place the stewed spinach and rice on a large plate, top with the creamy beef stroganoff and sprinkle with the remaining onion and parsley cucumbers.
