Rice is a very healthy and popular side dish. Many dishes can be prepared with its addition. Rice with mushrooms and spinach turns out to be very tasty and rich. It is served as a separate dish for lunch or dinner.
It is necessary
- - rice 200 g;
- - fresh champignons 250 g;
- - fresh spinach 150 g;
- - 1 clove garlic;
- - green garlic 1 bunch;
- - Mozzarella cheese 150 g;
- - cherry tomatoes 200 g;
- - lemon 1/4 part;
- - olive oil 3 tbsp. spoons;
- - salt.
Instructions
Step 1
Boil rice until tender, discard in a colander, rinse with cold water. Preheat the oven to 250 degrees.
Step 2
Wash the cherry tomatoes, dry, put on a baking sheet. Drizzle with olive oil and bake for 5 minutes.
Step 3
Peel the garlic and cut into thin slices. Cut the lemon into wedges. For cooking, you need only 1/4 part.
Step 4
Wash, dry and finely chop the young garlic and spinach. Wash the champignons, peel, cut half into slices. Leave the rest of the mushrooms intact.
Step 5
Heat olive oil in a skillet and fry the mushrooms in it. The mushrooms should have a golden color. Add chopped garlic and lemon to the skillet, then rice. Season with salt and stir.
Step 6
Sprinkle chopped spinach and garlic over the dish. Cover the pan with a lid and simmer for about 7 minutes over medium heat. Add tomatoes and cheese to the pan and stir gently. Simmer for 2-3 minutes over low heat.
