Ladies fingers cake is a very tasty dessert that is prepared according to a simple recipe and does not require a lot of time to prepare. It is based on eclairs, which are poured with sour cream cream, and allow to soak well. The result is a very tender dish. Thanks to the frozen sour cream with sugar, the cake looks like ice cream.

Instructions

Step 1

Take a glass of water and pour it into a saucepan that you put on a preheated burner. Put 100 g of butter in the water and melt it. Once the butter is ready to boil, reduce heat to low and pour a glass of flour into the butter. Stir the resulting dough with a spatula; it should look loose and shiny. After two minutes, it will acquire a pronounced smell of fried flour.

Step 2

Turn off the hotplate, remove the saucepan with the dough from it, and leave it to cool until it is almost warm. Then beat four eggs into it one by one. The mass will be slimy, and it will seem to you that the egg will not mix, especially the fourth, but this is a matter of time. Using a mixer, this can be done faster than with a spatula, the result will be the same in the end.

Step 3

The dough should become elastic, firm and stringy. Transfer it to a piping bag, you can use any durable plastic bag. Prepare a baking sheet, line it with baking paper, which lightly grease with oil. And preheat the oven to 200-220 degrees.

Step 4

Make an incision in the bag, only no more than 7 mm and, pressing on the dough in the bag, squeeze the "fingers" out of the bag. Their width should turn out to be small, about 1 cm, do not worry about this, they will increase during the cooking process. Make the length of the fingers 4-5 cm. Keep the distance between the blocks equal to their width, maybe a little more.

Step 5

Place the baking sheet in the oven. Bake the first five minutes at a temperature of 200-220, then ten minutes at 180 degrees. The main task is to let the fingers rise in the first five minutes (this is due to the high temperature), and then they must fix their size at a lower temperature so as not to settle.

Step 6

To make a traditional cream, combine sour cream and sugar. To add color, you can add jam, condensed milk, etc. When cooking, it is better to use thick sour cream (about 40% fat), thanks to which the cake will keep its shape well, however, it will not be soaked so much. If you are making a cake in a deep dish, you can use sour cream with a fat percentage no higher than 20.

Step 7

Dip each finger in the cream and place on a platter, forming a turret. Insist the cake for soaking for 12 hours, then keep it for 1, 5 hours in the refrigerator before serving. Can be garnished with chocolate chips on top.
