Tilapia fillet in batter
Crispy pieces of fish fried in batter can be served as a hot appetizer or main course. Cut the chilled or frozen fillet into medium-sized slices. Put them in a bowl, drizzle with vegetable oil and lemon juice, sprinkle with finely chopped herbs, salt and freshly ground black pepper. Cover the bowl with a lid and let sit for half an hour.

Prepare the batter. Sift wheat flour, mix it with warmed milk and 1 tbsp. a spoonful of vegetable oil. Whisk in a blender to make the mixture smooth. Separate the yolks from the whites and rub them with salt. Add the yolk mixture to the dough and stir. Let the mixture stand for 5-10 minutes. Beat the whites into a strong foam and place in portions into the dough. Stir everything very gently, from top to bottom.

Heat vegetable oil in a deep skillet. Dip the pieces of tilapia in the batter, let the excess drain, and then put in hot oil. Fry the fish on all sides until golden brown. Cook vegetable broth by adding peeled and chopped carrots, celery and parsley root, leeks, allspice peas, salt and dried basil to the water. Put the prepared fish in the prepared boiling broth and cook everything together for 5-7 minutes. Season the soup with dried basil and season with salt and pepper to taste.
