- 0.5 cups of poppy seeds;
- 3 tablespoons lemon zest

Instructions
Step 1
Sift 3 cups of wheat flour through a fine sieve along with baking soda (0.5 teaspoon) and table salt (3/4 teaspoon). Do not neglect this procedure - this way you will saturate the product with air, break caked lumps and remove accidental impurities. The lemon muffin will be softer and fluffier.
Step 2
Place in a large enamel or glass container 150 g of margarine or butter at room temperature, then 2 cups of granulated sugar. Stir everything with a mixer until a light fluffy mass is obtained. Add 3 raw yolks one at a time. Whisk 3 egg whites separately and combine with the rest of the ingredients.
Step 3
Prepare baking flavors. Mix a mixture of freshly squeezed lemon juice (0.5 cups), sour cream or unsweetened low-fat yogurt (3/4 cup) into sifted flour; combine with sweet buttery egg mass. Stir everything with a spoon and add 3 tablespoons of lemon zest and half a cup of poppy seeds to the lemon cake batter.
Step 4
Before adding to the dough, the poppy must be steamed well! To do this, pour it into an enamel bowl and pour boiling water over the liquid - the liquid should cover the seasoning by about 2 cm. Seal the container tightly with a lid and wait until the mixture cools down so that the water is completely absorbed into the poppy seeds. After that, add a little granulated sugar and rub everything with a rolling pin.
Step 5
Preheat the oven to 170-180 degrees and carefully coat a special pan for baking muffins or homemade bread with sunflower or olive oil. Pour the dough into it and flatten with a spoon.
Step 6
Lemon cake should be baked for about 45-50 minutes, until golden brown. To check the readiness of the baking, stick a toothpick or knife into the middle of it - the surface of the object should remain completely clean. Let the treat cool for 15-20 minutes before removing it from the mold. You can use lemon juice and icing sugar for decoration.
