Ingredients:

  • Chicken meat - 250 g;
  • Lamb (pulp) - 75 g;
  • Rice - 15 g;
  • Raisins - 5 g;
  • Eggs - 3 pcs;
  • Milk - 45 ml;
  • Onion - 1 pc;
  • Butter - 10 g;
  • Cinnamon, ground pepper, salt.

Preparation:

  1. The chicken is gutted without disturbing the abdomen, washed thoroughly, the skin is cut along the back and separated from the carcass along with the meat. The rest of the pulp is cut from the bones and scrolled with lamb using a meat grinder or blender. By the way, when choosing a chicken, you should pay attention to some aspects; poultry should look fresh, free of foreign odors and in intact packaging.
  2. Put rice in the minced meat, cooked until not fully cooked, finely chopped and lightly poached onions, washed and soaked raisins, and pour in milk (can be replaced with cream) with beaten eggs.
  3. Then knead well until a homogeneous mass is formed and season with cinnamon, ground pepper and salt.
  4. The minced meat is stuffed with the skin removed from the bones, pulled with food thread, poured with pre-prepared broth or salted water and boiled until cooked over low heat.
  5. Then, when the chicken is ready, it is cooled in the same broth and the thread is removed.
  6. The carcass is cut into large chunks and served.

When frying, onions can be lightly sprinkled with flour, then it will not burn and acquire a pleasant smell and golden color. If you want to get a more rich broth, the bird is immersed in cold water.
