Instructions
Step 1
Soak the couscous in hot boiled water, add a little salt and leave for 6 minutes, closing the lid. Then open the lid, mix everything, add more boiling water and close the lid again. Keep it closed until the couscous has absorbed all the water.
Step 2
Wash the raisins thoroughly and put in warm boiled water. Put the almonds in boiling water for a few minutes and then remove the brown husks from it. After that, transfer it to a preheated pan and fry a little.
Step 3
When the couscous has absorbed all the water, put the butter in it, add the cinnamon and stir everything very well so that the butter is completely absorbed into the couscous.
Step 4
After that, transfer the peeled nuts and raisins to the couscous, mix.
Step 5
Rinse the chicken carcass thoroughly and then wipe with a paper towel, salt outside and inside. After that, put the prepared couscous filling inside the chicken and sew it up with strong threads.
Step 6
Heat the sunflower oil in a deep cast-iron saucepan with a thick bottom, then put chopped onion and garlic in it, fry them for about 3 minutes. Then put the chicken in the pan and reduce the heat.
Step 7
Fry the chicken over low heat for about 15 minutes, then turn it over and add about 455 ml of water, honey to the pan, close the lid and simmer for about 35 minutes.
