Step 1
Rotate the beef through a meat grinder, make small balls of minced meat, roll in flour. Place the meatballs on a tray and dry.
Step 2
Put finely chopped onions and grated carrots in a saucepan with boiling water, cook for 13-15 minutes. Then add salt, reduce heat and add meatballs to the broth, stir and cook for another 6-12 minutes. When the meatballs are ready, use a ladle to remove them and set aside.
Step 3
Cut the leek stalks in half and rinse well, chop finely. Chop the onion and garlic finely. Cut the potatoes into large pieces, grate the parsley.
Step 4
Soften the oil in a deep saucepan with a thick bottom, add onions, leeks and garlic, cover and simmer for about 11-16 minutes, stirring occasionally, until the vegetables are tender but do not start to fry.
Step 5
Add potatoes and parsley to the onions in a saucepan. Pour the broth over the vegetables and bring to a boil. Reduce heat, cover and simmer for 15-18 minutes.
Step 6
Grind the soup with a blender until smooth. Season with salt if necessary, add the meatballs to the soup and heat for 5 minutes without boiling. Serve hot.
