Pancakes are truly Russian folk food, they are loved, perhaps, in every home. Often housewives, wishing to diversify pancakes, stuff them.

Lean fillings
It is not forbidden to eat pancakes even during the days of Great Lent, and therefore pancakes are stuffed exclusively with lean fillings.
Mushroom filling is widespread. To prepare it, chop the mushrooms or honey mushrooms, fry them in vegetable oil, add finely chopped onions, a little basil, salt and ground pepper. Put the cooled filling in a pancake envelope and serve.
Stuff the pancakes with mushroom caviar. Such a filling is prepared as follows: scroll the cooked mushrooms in a meat grinder, and then fry thoroughly. Sprinkle with seasoning and salt. Some put in a few more rolled tomatoes and grated carrots. Simmer all together for 10-15 minutes, evaporating excess juice. Serve a dish lavishly decorated with herbs.
Pancakes with buckwheat porridge and mushrooms are popular. The recipe for this filling is simple. Boil 100 grams of dry mushrooms. When they are ready, pour the mushroom broth into a separate container, and pass the mushrooms themselves through a meat grinder. Throw 300 grams of buckwheat into the broth and cook until tender.
Next, you need to do onions. Cut it into small pieces and fry in vegetable oil until tender. After that, mix the onion with mushrooms and buckwheat porridge. Put the prepared filling in the oven for 15 minutes, after which you can stuff the pancakes with it.
