Pancakes are an ideal form that can be filled with a variety of fillings - simple and original, salty and sweet, hot and chilled. Every pancake lover can find more than one filling to his liking.
Apple filling for pancakes
One of the most popular pancake fillings is apple. It can be very simple if you just fry the fruit slices in butter and sprinkle them with sugar, or it can surprise you with its originality if you add various spices to it. You will need:
- 1 tablespoon unsalted butter;
- 3 tablespoons of light brown cane sugar;
- 3 Granny Smith apples;
- 1/8 tsp ground ginger;
- 1/8 tsp ground cloves;
- 1/8 tsp grated nutmeg;
- 1/4 tsp ground cinnamon;
- juice of 1/2 lemon or orange.
Peel the apples, remove the core using a special tool and grate the pulp on a coarse grater. Put the apple shavings in a saucepan with melted butter, top with lemon or orange juice, add sugar and spices. Cook the filling over medium heat, stirring occasionally, for 20 minutes. Refrigerate and fill the pancakes.
Pancakes with filling are wrapped in a tube, open and closed triangle, envelope, or fill the pancake and tie it on top with an onion feather, like a bag.
Filling for curd pancakes
Curd filling for pancakes is popular with many Slavic peoples. For 15-20 thin elastic pancakes, you will need:
- 2 cups of cottage cheese with a fat content of 5-9%;
- 2 egg yolks;
- 2 tablespoons of 20% fat cream;
- 2 tablespoons of granulated sugar;
- 1 pinch of salt;
- 1 drop of natural vanilla extract.
In Ukraine, Poland and Moldova, pancakes with such a filling are often called napistniki. This name of pancakes stuffed with cottage cheese is also popular in Russia.
Wipe the cottage cheese through a fine sieve, add cream, egg yolks and granulated sugar to it, beat lightly with a mixer. Add vanilla and salt and mix well. Place two tablespoons of filling on each pancake, roll up with closed ends and bake, covered with foil, in a heat-resistant form in an oven preheated to 160 ° C.
Chicken and vegetable filling
The filling of chicken fillet and vegetables will turn out to be original and satisfying. For 10 thick pancakes you will need:
- 600 grams of chicken fillet;
- 30 g of wheat flour;
- 15 ml of olive oil;
- 3 stalks of celery;
- 5 green onion feathers;
- 1 grated carrot;
- 1 grated zucchini zucchini;
- 150 ml heavy cream;
- 100 g of grated cheddar cheese;
- 25 g of chopped basil greens;
- a pinch of salt and black pepper.
Chicken fillet, preferably lean breast, cut into cubes with a side of 2-3 centimeters, sprinkle with flour on all sides and fry in olive oil warmed up to a slight smoke. Chop the celery stalks and add them to the chicken, along with grated courgette, carrots, and chopped green onions.
Simmer over medium heat, stirring occasionally, for 10 minutes. Top with cream, season with salt and pepper and simmer until filling thickens, add cheese and cook until melted. Sprinkle with basil and fill the pancakes with an envelope.
