Maslenitsa week is simply not imaginable without pancakes: large and very small, with and without fillings, but pancakes from the end of February until Lent do not leave the tables of Russians. However, those who are not fasting do not refuse delicacies until the very summer, changing only the filling from meat to a more modest one - vegetable, berry or cottage cheese. The culinary fantasies have a place to roam!
They came up with the idea of starting pancakes in fasting in one of the monastic parishes. The first fillings were…. porridge. The most common lean porridge. Such pancakes were baked specifically for those who, for health reasons, could not keep a strict fast. The tradition has taken root, and they continue to stuff pancakes to this day.
Vegetable fillings
Some connoisseurs prefer lean pancakes. The recipe for its preparation is as follows: put two tablespoons of sugar in a frying pan dipped in vegetable oil and fry well (but do not allow caramel to form). Then add the chopped cabbage, stir well and sauté until brown. You do not need to salt. The cooled filling can be stuffed with pancakes.
Many gourmets prefer the filling from. To do this, finely chop the cabbage and bake the eggplants, which are then passed through a meat grinder. After that, simmer the prepared ingredients for 10 minutes over low heat, add chopped onions, salt and pepper, cover and simmer for another 15 minutes until the excess liquid is gone.
