Cauliflower is a source of vitamins and minerals essential for the body. The fastest and easiest way to cook is baking or boiling. Cabbage in batter is ideal as a side dish, as well as a daily meal in the diet.

- –Fresh cauliflower (1 fork);
- –Quail eggs (9 pcs.);
- -salt;
- –A mixture of Provencal herbs (1 tsp);
- –Potato or corn starch (40 g);
- - vegetable oil for frying.
Instructions
Step 1
Take cauliflower and cut into florets with a knife or hands. Small dark spots on the vegetable can be removed with a clean brush, and also removed with a sharp blade. Place the inflorescences in a deep bowl and add boiling water for 3-7 minutes.
Step 2
Mix the starch with the herbs of Provence and salt. In a separate bowl, beat the quail eggs with a metal whisk. Gently add the spiced starch to the eggs, whisking continuously. Make sure that all the lumps come apart. This will give you a smooth batter consistency.
Step 3
Drain the cauliflower cup. Under the influence of boiling water, the inflorescences will become softer. Take each inflorescence, dip it into the batter and quickly put it in a frying pan with hot oil. Fry, covered, no more than 15-17 minutes.
Step 4
Prepare a plate in advance, on which you should put several layers of paper napkins. When the cabbage is fried, take a slotted spoon and put it on a dish. Wait for excess oil to be absorbed. Serve the batter with fresh vegetables such as bell peppers, lettuce, cucumbers and tomatoes.
