But if you cook it in batter, cauliflower will turn from “enemy number 1” into a confident competitor to such beloved and unhealthy foods as fries, chips and crackers.

Wash the cauliflower. Disassemble into inflorescences.

Now you can boil the cabbage until half cooked or pour boiling water over it. It all depends on what taste your household is used to. Boiled it will be softer, scalded it will remain crispy.

It is better to prepare the batter in advance and let it stand for an hour. What liquid to choose for batter is a matter of taste. The batter on mineral water or beer will be more fluffy, on milk and cream it will be more tender.

Do not be afraid that the beer batter will retain its "degree", because during heat treatment, frying, alcohol will evaporate from the dough.

Step 3

Some cooks recommend using only whipped egg white for batter. Such batter will be more lush. If you decide on a "protein batter", then the whipped egg whites should be added to the dough after it has spread.

For an ordinary batter, beat an egg with spices, add liquid and add flour in a thin stream. Whisk again and set aside. Add finely grated cheese.
