To prepare the dish you will need: 1 kg of cauliflower, 3 tbsp. l. fine flour, 4 eggs, 50 g of grated cheese, some dry herbs, as well as vegetable oil, pepper and salt - to taste. Before cooking, divide fresh or defrosted cabbage into separate inflorescences, clean each of dark spots. Rinse the inflorescences in water, cut too thick in half. Boil the cabbage in salted boiling water for 10-15 minutes.

Boil the cabbage in a little water to keep its rich taste and aroma.

Check the readiness of the product with a fork. Throw the boiled cabbage in a colander and wait until it cools. You can also steam cauliflower for this dish. While the vegetable is cooking, make the batter. Beat eggs with herbs and salt, add flour in small portions, stirring constantly. The batter should have a thick consistency. Heat a skillet with vegetable oil. Dip cabbage slices in batter and fry in a skillet until golden brown. Place the inflorescences on a flat plate, sprinkle with grated cheese on top and serve.

Cauliflower in batter can be deep-fried. To do this, you will need: 1 kg of cabbage (fresh or thawed), 2 eggs, 400 g of flour, 1 tsp. sugar, 2 tbsp. l. olive oil (for dough), 500 ml of mineral water, allspice, salt to taste, vegetable oil (for deep fat). Divide the cabbage into inflorescences, rinse, boil water, add salt and dip the cabbage pieces into it. Boil them for 5-10 minutes and discard them in a colander.

Separate the whites from the yolks. Combine the yolks with granulated sugar, mineral water, olive oil, salt, pepper and flour. Stir until smooth, there should be no lumps. Beat the whites until thick foam and add them in small portions to the bulk, stirring constantly. Pour vegetable oil into a deep fryer and heat it up. Take each inflorescence with a fork, dip in batter and send in oil, the pieces should be 2/3 submerged in it. Fry them until golden brown.

Place the fried cauliflower on a flat plate lined with a paper towel to draw the excess fat out of the pieces. Serve as an appetizer with tomato, mushroom garlic sauce, or as a side dish.

Instead of a deep fryer, you can use a deep skillet or a heavy-walled saucepan.

Cauliflower cooked in cheese and beer batter turns out to be delicious. For this dish you will need: 600 g of cauliflower inflorescences, 2 eggs, 5 tbsp. l. flour, 2 tbsp. l. sunflower oil, 60 g of hard cheese, pepper and salt to taste. Prepare the cauliflower, boil the flowers in salted water or steam them. Grate the cheese on a fine grater. Mix eggs with vegetable oil, beat and pour in beer. Mix, salt, add spices, add flour and make a batter. Add cheese to it and mix everything again.

Pour a large amount of oil into a deep frying pan, heat, dip cabbage pieces in batter, put in oil. Fry it until golden brown and serve hot.
