Neapolitan cake is a multilayer cake consisting of dry parts (biscuit, cakes), which are sandwiched or soaked in creams, syrups, and jam. The rich taste of roasted almonds add sophistication to this cake, and the citrus zest adds a special aroma.

Step 1
First you need to prepare the filling. To do this, place 1/4 cup sugar in a small saucepan. Stir over high until all of it is caramelized.
Step 2
Then reduce heat and add jam, 1 tablespoon water, a pinch of salt and lemon juice. Stir until the caramel dissolves. Then remove from heat and set aside to cool.
Step 3
Use a mixer to mix the butter, remaining sugar, 1/4 teaspoon of salt until light and fluffy for 5 minutes. Then add the chopped almonds, then the egg yolks one at a time, the almond extract and the remaining flour.
Step 4
Divide the dough into six equal portions. Form each piece of dough into a layer - a cake with a diameter of 20 cm. The edges of the cake layers should be evenly rounded. Chill them in the refrigerator for 2 hours or freeze them for 30 minutes.
Step 5
Preheat oven to 190 degrees. Bake each crust on a baking sheet covered with parchment paper until golden brown for 15 minutes.
Step 6
Apply a thin layer of the jam filling to each crust. Also coat the topmost layer with the filling and sprinkle with chopped almonds on top.
