The classic recipe for making homemade lollipops can be further modified by adding various ingredients - cocoa, fruit juices, food colors, zest. To make homemade lollipops, you will need: 10 tbsp. tablespoons of sugar, the same amount of water, 1 tbsp. a spoonful of vinegar or 1/3 teaspoon of citric acid, vegetable oil.

For making homemade lollipops, it is better to use natural wine

or apple cider vinegar

First you need to mix water, vinegar and granulated sugar in an enamel container. All this must be put on medium heat and warm well with continuous stirring. When the sugar is almost dissolved, it is necessary to reduce the heat to a minimum and, while stirring, cook the sugar syrup until a golden color is formed. You should periodically check the readiness of the syrup - drip the preparation syrup into a glass of cold water. If the drops quickly solidify in water, you need to remove the pan from the heat - the caramel syrup is ready.

The preparation time for the syrup depends solely on the amount of liquid in the pan - the larger the portion, the longer the cooking time.

If there are no real, old forms for lollipops, then it is not difficult to find an interesting alternative to the traditional form. Although it will not be possible to get volumetric figures of animals, you can make them original. The main thing is that the mold can withstand the temperature of the hot caramel syrup.

As a mold for lollipops, you can use ice molds, silicone, molded chocolate boxes. Some people make candy by filling caramel syrup on a baking tray.

Next, grease the prepared candy molds with vegetable oil and fill them with the prepared caramel syrup. To make homemade cockerels on "legs", it is necessary to insert prepared sticks into the molds with caramel syrup.

You can buy special lollipop sticks at the store, or you can use bamboo skewers or wooden toothpicks as lollipop sticks. In this case, the sharp ends of the sticks must be cut off. Then you need to cool the lollipops to room temperature and remove them from the mold. Traditional grandma's cockerels are ready to eat!

To prepare multi-colored homemade cockerels, you should deviate a little from the main recipe, taking 8 tbsp. tablespoons of sugar, 3 tbsp. tablespoons of fruit or berry juice without pulp and 1 teaspoon of lemon juice. Then you need to mix all the ingredients and heat them until the sugar dissolves in a non-stick dish, while stirring continuously. The doneness of the sugar syrup is determined in the same way as in the traditional recipe.

If powder food colors are used in the preparation of homemade "cockerels", then they should be thoroughly dissolved in water before the heating process. Otherwise, the candy will color unevenly. Flavors for cockerels can be: cocoa, coffee, citrus peel, beetroot or carrot juice, synthetic food flavors.
