Lollipops, such as were once sold on the streets from trays, can be prepared at home, and the process of preparing this delicacy from your distant childhood will not take much of your time.
It is necessary
- Granulated sugar 120 gr;
- Natural juice (best of all carrot) 20 ml;
- Water 20 ml;
- Vinegar 9% (you can take red wine) 2h. spoons;
- Sugar pencils, poppy seeds and sesame seeds for decoration;
- Kebab skewers;
- Special forms (you can use ordinary baking paper);
- Any oil for lubricating molds.
Instructions
Step 1
Pour granulated sugar into a saucepan, pour vinegar, juice and water, mix everything thoroughly and put on fire. You will have to spend about 20 minutes near the stove, during which time the sugar should completely boil down and turn into a golden brown caramel. Do not stir the caramel with a spoon, if in some place it begins to darken, you just need to tilt the saucepan so that its contents are mixed. You cannot bring the caramel to a boil.
Step 2
While the syrup gradually turns into caramel, prepare the molds for future candies, namely, carefully lubricate each mold from the inside with any vegetable oil. If this is not done, the lollipops will stick to the molds and it will be very problematic to get them out of there.
Step 3
Gently pour the candy mass into molds or baking parchment, then insert a skewer or toothpick into each candy and let it set. It is best to place the candies in the refrigerator.
