Honey lozenges soothe a sore throat, are delicious and healthy. Like regular candies, which are made from sugar, honey candies are made from boiled syrup. It solidifies upon cooling, retaining the form that it took in a liquid state. Making candy may seem like a complicated process, but all you need to do is stir the syrup and monitor the temperature.
For the aspiring pastry chef, there are some tips to try.
In order to make honey candies, you will need:
- baking sheet;
- parchment or wax paper;
- a saucepan with thick walls;
- 200 g of sugar;
- 65 g of honey;
- 2 tablespoons of water;
- beaker;
- wooden spoon;
- food thermometer;
- 2 teaspoons of lemon essence;
- measuring ladle;
- lollipop sticks.
1. Cover the baking sheet with parchment or wax paper. Place the baking sheet where it will be close at hand.
2. Put honey, water and sugar in a saucepan. Place on the stove over medium heat. Heat the mixture, stirring constantly, until all the sugar crystals are dissolved.
3. Attach a food thermometer to the inside of the cookware and turn up the heat. Let the mixture boil without stirring or touching the pan. Continue boiling until the temperature reaches 150-155 ° C. The mixture should be transparent lemon yellow in color.
4. Remove the saucepan from the heat and pour the mixture into an ovenproof measuring cup or ladle. Add lemon essence quickly using a wooden spoon.
5. Place the hot mixture balls on the prepared tray. Try to make them as round as possible, and so that they are no more than 5 cm in diameter. Arrange the sticks so that one end lies in the future candy. Twist the sticks so that the ends are in the cooling syrup. This will prevent the lollipop from falling off the stick when eaten.
6. Let the candies cool for at least 30 minutes before removing them from the tray. Wrap each lollipop in wax paper or plastic wrap to store.
