  • - 100 ml of chicken broth;
  • - 150 g fresh salmon fillet;
  • - 11 ml lemon juice;
  • - 50 g fresh spinach;
  • - 80 g of dry white wine;
  • - 10 g of turmeric;
  • - 1 piece of onion;
  • - 15 ml of sunflower oil;
  • - 100 ml of low-fat cream;
  • - 5 ml of olive oil;
  • - 1 g fresh rammarine;
  • - 5 g pink peppercorns;
  • - 1 g dry thyme;
  • - 1 g dry garlic;
  • - salt to taste.

Step 1

First, prepare the aromatic oil for the dish. Ideally, it needs a few hours to steep properly, but you can cook it before serving, it won't be any less delicious. In a small cup, preferably a glass one, mix 5 ml of olive oil and 5 ml of sunflower oil. Stir and add fresh rosemary. Then pink pepper, thyme and garlic. Stir the mixture thoroughly, pour into a small skillet and stir constantly, bring to a boil, remove from heat and let cool. Place in a cool place to infuse.

Next, prepare a delicate creamy sauce for the fish. To do this, wash and peel the onions. Cut the onion into feathers as thin as possible and fry until golden brown in vegetable oil. Slowly add wine, then cream, while stirring, bring to a boil. Then reduce the heat a little on the stove and simmer the sauce for 10-15 minutes. Stir the mixture so it doesn't burn. Remove the sauce from the stove and add the turmeric and lemon juice, salt to your taste. Strain the sauce through a small sieve or cheesecloth into a small bowl.

For the preparation of the steak itself, it is better to use fresh pink salmon. If using frozen, defrost it properly before cooking. Fry the salmon, lightly salt in aromatic oil for 3-4 minutes on each side. Transfer to a sheet, add lemon juice and bake in the oven for 7-10 minutes at 180 degrees. Heat the chicken stock and stir in the creamy sauce. Pour the sauce onto a wide rimmed plate, arrange the spinach leaves and place the cooked salmon steak.
