Ur is a Polish soup. Its other name is zurek. This first course is as old as it is original. It turns out sour and very satisfying thanks to a rich broth made from bones and smoked brisket and the zhur itself (sourdough).

It is necessary

  • - 260 g smoked brisket;
  • - 200 g of seeds for broth;
  • - 40 g of parsley root;
  • - 1 carrot;
  • - 5 cloves of garlic.
  • Ingredients for zhur:
  • - 400 g of oat or rye flour;
  • - 1 glass of water.

Instructions

Step 1

Prepare the soup starter first. Dissolve oatmeal or rye flour in a ceramic bowl with a glass of water, remove for 3 days in a warm place for fermentation.

Step 2

Cook the broth from the bones and smoked brisket with the addition of parsley and carrots.

Step 3

Strain the finished broth, the bones are no longer needed. And cut the brisket into cubes.

Step 4

Add zhur to the broth, bring to a boil, add the brisket, salt. Mash the garlic with salt, send to the soup.

Step 5

Pour ready-made Polish zhur into soup bowls, drizzle with melted butter and garnish with fresh parsley.
