Homemade Krasnodar sauce based on tomato and apple puree step by step recipe with photo

Ingredients:

  • tomatoes - 2 kg;
  • apples - 1 kg;
  • garlic - 4 cloves;
  • vinegar - 2 tbsp. l. (it is advisable to use vinegar 9%);
  • ground black pepper - 1 gram (add to taste);
  • cinnamon - 1 tsp;
  • nutmeg - 1 tsp;
  • salt - 2 tsp;
  • sugar - 6 tsp

Preparation:

  1. First, let's start preparing apples: wash them, peel them and remove unnecessary seeds.

  2. Grind apples together with tomatoes in a meat grinder.
  3. Put the resulting apple and tomato puree on the stove. Cook for 30 minutes without adding spices. It is better to take a pot for cooking with a thick bottom or non-stick coating.
  4. After 30 minutes, remove the pan. Beat the sauce with a blender and put on fire again.

  5. Add spices to the resulting mass: nutmeg, cinnamon, salt, sugar and black ground pepper. Mix everything and set it to cook for another 10 minutes.

  6. After 10 minutes add finely chopped or pressed garlic and vinegar. Leave it to cook for another 5 minutes.
  7. We prepare the jars: we rinse them thoroughly (preferably with soda), inspect them for chips and cracks. And we set to sterilize in any way that is more convenient for you. I prefer to sterilize small jars with boiling water. To do this, you need to draw cool water into the pan so that the cans are completely covered. Cover and simmer. After boiling, you need to cook for 5 minutes. Then remove with tongs or a fork and place the cans on a clean ironed towel. Pour the prepared sauce into sterile jars and close with sterile lids.

Soviet-style Krasnodar sauce at home original recipe

Ingredients:

  • tomatoes - 10 pcs. (large or slightly larger than average);
  • apples - 5 pcs. (preferably sweet variety);
  • water - 4 tbsp. l.;
  • ground black pepper - 1/2 tsp;
  • salt - 1/2 tsp;
  • cinnamon - 1/3 tsp;
  • grated nutmeg - 1/3 tsp;
  • red hot pepper - 1/3 tsp. (can be replaced with half a small pod);
  • sugar or honey - 1 tsp;
  • vinegar (9%) - 2 tbsp. l.;
  • garlic - 3-4 cloves.

Preparation:

  1. We wash the tomatoes and put them in a saucepan. Pour 2 tbsp. l. water and simmer over low heat until softened.
  2. Remove the pan from the heat and drain the water. Rub the tomatoes through a sieve, freeing them from the skin and seeds.
  3. Next, cut the apples in half, add 2 tbsp. l. water and simmer in the same way as tomatoes. We also rub the apples through a sieve.
  4. Combine tomato and applesauce in a saucepan, cover with a lid. We put on a low heat and simmer for 20 minutes until thickened.
  5. Put the red pepper, cinnamon and nutmeg in a gauze bag and put in a saucepan. Then add black pepper and leave on fire for another 10 minutes.
  6. After the time has elapsed, add vinegar and 3-4 chopped garlic cloves. Leave it to stew for another 5 minutes and take out the gauze bag with spices. The sauce is now ready.
  7. Pour the hot sauce into sterile jars, tighten the lids, turn over and wrap until it cools completely.

Homemade Krasnodar sauce with bell pepper instant recipe

Ingredients:

  • tomatoes - 500 gr.;
  • apples - 500 gr.;
  • red bell pepper - 300 gr.;
  • vegetable oil - 30 ml.;
  • vinegar (9%) - 10 ml.;
  • garlic - 4 cloves;
  • cinnamon - 1/3 tsp;
  • nutmeg - 1/3 tsp;
  • black peppercorns - 1/2 tsp;
  • bay leaf - 2 pcs.;
  • salt - 1/2 tbsp. l.;
  • sugar - 1 tbsp. l.

Preparation:

  1. First, wash the tomatoes and put them in a saucepan. Pour boiling water over for 2-3 minutes.
  2. Peel the tomatoes and cut into quarters.
  3. Then we cut off the tails of the bell pepper, remove the seeds and wash them under running water.
  4. Next, wash the apples, peel and core them, and cut them into four pieces.
  5. Twist tomatoes, peppers and apples in a meat grinder, transfer to a saucepan.
  6. Place the pot with the contents on the stove and add the spices: salt, sugar, cinnamon, nutmeg, black pepper and chopped garlic. Cook for 20 minutes.
  7. Remove the pan from the heat and beat the tomato mass with an immersion blender.
  8. After beating, put the pan on the fire again and put the bay leaf in it. Add vinegar, vegetable oil and cook for 15 minutes, stirring occasionally.
  9. Pour the finished sauce into sterile jars, tighten with sterile lids, turn over and wrap until it cools completely.
