  • butter - 170-350 gr.
  • egg yolk - 2 pcs.
  • lemon juice - 170 ml
  • white wine - 150 ml
  • salt
  • pepper
  • cilantro - 350 gr.

Instructions

Step 1

Peel the asparagus and place in a saucepan of boiling water, add salt to taste. Cover and cook for 13-14 minutes. Remove the asparagus and place in a cup of cold water, cool and place on a plate.

Step 2

For the hollandaise sauce, melt the butter in the microwave. Remove the foam from the top and cool for 7-17 minutes.

Step 3

Pour the white wine into a bowl and add the egg yolks. Beat the mixture well with a whisk. Place the bowl on the double boiler and add a little melted butter, stirring slowly. Add chopped cilantro, green onions, salt, lemon juice and pepper and stir.

Step 4

Wrap the salmon slices over the asparagus and place on a plate. Drizzle with cooked sauce and garnish with a sprig of cilantro and green onions. Bon Appetit!
