Pancakes according to an old Dutch recipe were once prepared at Wardenbürg Castle for the owners of this estate. Let us pamper ourselves like real nobles!
It is necessary
- Products:
- wheat flour - 250 g
- buckwheat flour - 250 g
- dry yeast - 15 g (can be replaced with regular ones)
- milk 300 ml
- raisins 100 g
- egg 1-2 pcs.
- sugar - 100 g
- Salt - a third of a teaspoon
- refined vegetable oil

- Frying pan with a thick bottom
- Dough container
- Sourdough container
- Container for filling
Instructions
Step 1
Pancake sourdough
Pour hot milk (100 ml) into a small saucepan, add 100 g of sugar, add yeast.
Mix everything thoroughly, cover with a lid and put in a warm place for 30 minutes (for example, on the stove next to a lighted burner, near the battery)
Step 2
Cooking the filling
We sort out the raisins, pour boiling water, cover with a lid, steam for 2 minutes.
We drain the water. We set aside the container with raisins.
Instead of raisins, dried apricots can be used, but before being poured into the dough, it must be cut into small pieces.
Step 3
Kneading the dough
Sift flour, mix buckwheat flour with wheat flour in a spacious dough container.
Pour in the leaven, drive in 1-2 eggs. Salt, add 200 ml of warm milk and a tablespoon of vegetable oil. Mix the dough thoroughly so that there are no lumps. Pour the filling into the dough (steamed raisins or dried apricots), mix thoroughly. The dough should be smooth.
Cover with a lid and leave the dough in a warm place for 30-35 minutes.
Step 4
Fry
Pour some vegetable oil into a frying pan and heat over low heat. Pour the pancake dough into the hot frying pan using a large serving spoon or ladle. Fry over low heat until golden brown, turn over, remove.
Step 5
Serve on the table
Removing the pancakes from the pan, put them on a dish on top of each other, smearing each on top with a piece of butter.
Pancakes can be served with any jam, sour cream, syrup or honey.
Such pancakes with sweet sour cream mixed with jam or whipped with fresh raspberries and strawberries are very tasty.
