Choosing fish in the market is not so easy. The sellers are trying to give the fish a marketable appearance, and they tell in full that this fish just yesterday swam in the sea or river. In order not to fall for the bait and not to buy the missing fish, you need to remember a few rules for determining the freshness of fish.
1. Press your finger on the fish. On fresh fish, the dent will quickly disappear.
2. Smell the fish. The smell of fresh fish is faint but noticeable. Sea fish smells like sea and iodine, river fish - most often mud. If the fish smells like oil or doesn't smell at all, then it has been processed and is not fresh.
3. Look at the eyes of the fish. In fresh fish, they should be transparent, convex and slightly shiny.
4. Pay attention to the skin and scales. If the skin is firm, shiny and covered with transparent mucus, then the fish is fresh. The scales should fit snugly against the skin, and the fins and tail should not be stuck together.
5. Check the gills. The gills of fresh fish are moist. Their color should be from pink to red. But in no case with a gray or brown tint.
Don't forget that only fresh fish is healthy!
