Before storing fresh fish in the refrigerator, rinse it thoroughly in cool running water and dry it. Then put the fish on a dish and put it in the coldest place in the refrigerator, where the temperature is 1-5 ° C below zero. The fish frozen in this way retains its beneficial properties for 1 day.

If you plan to store fresh fish for more than a day, be sure to gut it and remove the scales. Then wrap it in clean absorbent paper soaked in salt water for a couple of minutes. Next, wrap the fish in a dry cloth and place the refrigerator.
Step 3
Gutting and scaling fresh fish before placing it in the refrigerator for a long time is a must. But it is not recommended to remove the skin from the fish. After all, it is the skin that is able to protect the meat of fresh fish from dryness.

If you rub the carcasses of fresh fish with salicylic acid powder and wrap them in a cloth soaked in vinegar, the possible shelf life of the product can increase to 15 days.
Step 5
The same amount can be stored for fresh gutted fish, having previously washed it in water and sprinkled with sugar (1 tablespoon of sugar per 1 kg of fish). Sugar preserves the fish, preventing it from spoiling.
Step 6
It is highly discouraged to take it out of the refrigerator until fresh fish is cooked. Bacteria in it easily multiply at room temperature, so keep fresh fish in the cold even while cooking other ingredients in the dish.
Step 7
Never store fresh fish next to foods that do not require cooking. These include sausages, cheeses, ready-made salads, etc.
Step 8
Also, do not let the immediate neighbors of fresh fish in the refrigerator are butter, milk and cottage cheese. The proximity to fish can give these products an unpleasant odor.

An important rule for storing fresh fish is not to freeze it again, otherwise it will lose its juice and many of its taste.
