Dumplings are a dish familiar to us from early childhood. The homeland of dumplings is Ukraine. This is a very delicate and specific dish, it is for these qualities that the peasants called them magical and fabulous. And how rich in their variety are fillings for vreniks! Nowadays, dumplings can be bought at any grocery store, but they never compare to those that we cook with great love in our kitchen.

It is necessary

    • For the test:
    • wheat flour - 450 g;
    • egg - 1 pc;
    • milk or water - 150g;
    • sugar;
    • salt.
    • For minced meat:
    • fresh cabbage - 1 kg;
    • butter or margarine - 50 g;
    • eggs - 2 pcs;
    • salt.

Instructions

Step 1

First, prepare the dough for dumplings. Take flour and be sure to sift it through a sieve one or more times. Prepare in advance a deep container in which you will knead the dough. Put sifted flour into it, break one egg and gradually pour in water with salt and sugar dissolved in it. Mix everything well and knead a tough dough. After that, leave it for twenty to thirty minutes so that it has time to swell slightly.

Step 2

Now prepare the filling for your dumplings. Chop the cabbage finely with a knife and pour boiling water over it. Let it stand for five minutes and drain off the water. Squeeze the cabbage, add eggs, butter, salt to taste and mix well.

Step 3

Roll the finished dough into small bundles no more than one and a half to two centimeters thick. Then cut them into small pieces and lightly crush each from the side of the cut and roll a little in flour. Roll out small cakes one and a half to two millimeters thick. The more such cakes you roll, the more dumplings you will get.

Step 4

Now put the cooked minced meat in the middle of each tortilla, then fold it in half and pinch the edges. Try to pinch the edges harder so that they do not come apart during cooking and the contents of the dumplings do not spill out. Shape the dumpling into a crescent shape. Put the finished dumplings on pre-cooked and floured planks or a baking sheet. Be sure to cool them down - put them in the refrigerator or freezer for a few minutes.

Step 5

Dip the dumplings in boiling salted water before serving. One kilogram of dumplings requires about four liters of water. Bring them to a boil and cook for five to seven minutes.

Step 6

Put the finished dumplings on a large dish and top with butter. Drizzle with sour cream before serving or place a separate plate of sour cream on the table so that the dumplings can be dipped into it.
