It is necessary

  • For two servings:
  • - 400 g green beans;
  • - 100 g of walnuts;
  • - 10 g each fresh cilantro, green basil, lilac basil;
  • - 1/2 head of onion;
  • - 2 cloves of garlic;
  • - 1 tbsp. a spoonful of sunflower oil;
  • - 1 teaspoon of wine vinegar;
  • - dry adjika, utskho-suneli, salt to taste.

Instructions

Step 1

Cut the green beans into large pieces. For this recipe, it's best to take long Georgian beans. Boil the chopped beans in water - after boiling starts, it will take about 20 minutes. Drain the beans in a colander, let the water drain and leave to cool. Prepare your vegetables for now.

Step 2

Peel the onions, we only need half, but if you like onions, you can chop the whole head as well. Fry the onions in sunflower oil and plain water.

Step 3

Scroll the walnuts twice through a meat grinder, then mix with fried onions.

Step 4

Rinse fresh cilantro, green and purple basil, shake off moisture, chop finely. The abundance of greens will only make the lobio tastier, so do not exclude them from this recipe.

Step 5

Peel the garlic, chop finely or pass through a garlic press, send to the onion with nuts. Add chopped herbs, dry adjika to taste and utskho-suneli there. Pour in 1 teaspoon of wine vinegar, mix everything thoroughly.

Step 6

Now you can mix the resulting vegetable mixture with the finished cooled green beans. If necessary, add salt to the dish or add more seasonings and spices to taste. Serve rustic lobio right away.
