Azu is a national Tatar dish based on potatoes, stews and pickles. It turns out quite satisfying and, of course, delicious.
Ingredients:
- 550 g of beef or veal;
- 550 g potatoes;
- 3 pickled cucumbers;
- 1 onion;
- 2 tbsp. l. tomato paste;
- 3 cloves of garlic;
- 3 bay leaves;
- Salt and pepper to your taste.
Preparation:
- Rinse the meat and cut into strips across the fibers (5cm * 1cm). We take a rooster and pour vegetable oil into it, then you need to warm it up a little and put the meat. If there is no rooster, you can take a deep frying pan. Fry the meat for 20 minutes, periodically turning it over.
- Boil water and pour the meat into it so that it is slightly covered with water. Cover, reduce heat, simmer for 90 minutes. If after the indicated time the meat is still not ready, try throwing a pinch of baking soda or a slice of rye bread into it. This will cook it faster.
- When the meat is ready, you need to open the lid so that the rest of the water evaporates and the meat is browned.
- Peel the onion and cut it into small cubes, add to the meat. Fry until the onion is soft.
- Also add tomato paste (you can add fresh, grated tomato) and cucumbers cut into strips, stir well. Simmer for another 5 minutes.
- Wash, peel and cut the potatoes into strips. Fry it in a separate skillet until tender. At the end, salt (it is important to salt at the end, otherwise the potatoes may fall apart). Then pour the fried potatoes into the rooster and simmer all together for 5 minutes.
- Peel and chop the cloves of garlic, add to our dish, then put bay leaves and spices in it, mix and cover for 10 minutes so that the dish is infused, absorbs the aroma of garlic and spices.
