Step 1

Pour water into a saucepan and put on fire. Dissolve the potato starch separately in a glass of warm water. Mix well. When the water in the pan starts to boil, pour in the starch in a thin stream. If sediment remains at the bottom of the glass, it can be diluted with a little water and sent to the pan. Make sure there are no lumps.

Step 2

Add berry syrup or jam to boiling water. Perfect syrup from cherry or aronia jam, jam from red or black currant, raspberry, strawberry, cranberry. You can also use an assortment of these berries. The main thing is that there are no bones and skins. Better to use homemade jam or syrup. They are much more fragrant, and there are no preservatives in them. To taste, jelly can also be sweetened with sugar.

If you don't have homemade jam, make a syrup with fresh or frozen berries. Take 300 grams of cherries, raspberries, red currants, or cranberries. Add sugar to taste. Wait until the berries start juicing, put on low heat. Stir so that the mass does not burn. Bring to a boil, remove the foam.

Cook for another 5-10 minutes, then cool and strain the berries through a sieve to get rid of the skins and seeds. Now they can be added to the jelly. Also, syrup is made from dried fruits. True, such a drink will be less aromatic and rich.

Stir the mixture well. Bring to a boil, reduce heat and wait five minutes. If it seems to you that the jelly is not thick enough, then you can dilute a little more starch and add to the pan. In this case, it is necessary to pour it in very carefully so that lumps do not form.

Step 6

Taste the drink. Does it have enough berry syrup and sugar? If not, add them as well. Boil the jelly for a few more minutes, then remove from heat and let cool. Pour the drink into glasses and serve.
