Spicy and light rhubarb soup will serve you a delicious lunch for the whole family. It does not require a lot of cost and time to prepare.
It is necessary
- - tomato juice 600 ml;
- - rhubarb 150 g;
- - olive oil 2 tablespoons;
- - onion 1 pc;
- - ginger 10 g;
- - garlic 2 tooth;
- - celery 50 g;
- - brown sugar 4 tbsp;
- - port wine 50 ml;
- - Bay leaf;
- - anise 1 asterisk;
- - coriander seeds 0.5 tsp;
- - basil;
- - herbs, pepper, salt.
Instructions
Step 1
Chop the ginger. Cut the peeled onion and celery into small cubes. Add the ginger and vegetables to the hot oil in a saucepan and cook for 3-5 minutes.
Step 2
Wash the rhubarb, dry and chop finely. Add chopped rhubarb and sugar. Cook over high heat for 5 minutes. Pour in the port, reduce heat slightly and simmer until the amount of water decreases.
Step 3
Peel and chop the garlic. Add tomato juice, star anise, bay leaf, garlic. Cook for 10-15 minutes, then grind everything with a blender. Season with salt and pepper. Leave the soup for 5 minutes to infuse. Serve with finely chopped herbs, basil and cream.
