In order to make it easier to separate the bones from the chicken, it is better to pre-cook it - boil, fry or bake. But in this case, the meat will be removed in separate pieces. To prepare some dishes, it is necessary to remove bones from raw chicken in order to maintain its shape and integrity during cooking. This is done in several stages.
Instructions
Step 1
First, completely defrost the chicken.
Step 2
Then separate the spine from the meat. To do this, take a chicken, feel the hip joint and dislocate it with strong pressure. If you cannot dislocate, use a knife. This will separate the bones of the spine from the hip bones.
Step 3
After that, take the chicken in your left hand, and the knife in your right and gradually separate the meat from the spine, moving very gently in the direction from the tail to the neck. Be especially careful when separating the skin along the spine, as there is almost no meat there and the skin is very easy to break through. If you do break through the skin, you can later cover the hole with the skin from the neck.
Step 4
When you reach the middle of the carcass, make an incision along the thigh line so that the bones of the spine are separated from the bones of the chest.
Step 5
Now completely remove the chicken's spine and neck.
Step 6
Then carefully separate the chicken meat from the breast bones.
Step 7
Then locate the shoulder joint at the chicken's wing and dislocate or cut it in the same way as the hip joint.
Step 8
It remains only to remove the bones of the thigh, carefully cutting off the meat from them and dislocating the joint at the lower leg. Separated bones with leftover meat are good for making broth or soup.
Step 9
If you managed to completely remove the bones from the chicken carcass, practically without damaging the skin, you can stuff it with various vegetables, cheese, rice or buckwheat and bake it. Such a dish is very convenient to cut and eat, it is very tasty, easy to prepare and looks good when served.
