Herring dishes are almost an indispensable attribute of any festive table. To prepare them, the hostesses often buy already cut fillets in order to save time and not be tormented by extracting small bones, which this fish has quite a lot. Meanwhile, it is not so difficult to extract bones from a whole herring in the process of cutting it.

Step 1

Before removing bones from a herring, it should be gutted. To do this, lay a large sheet of any clean paper on a cutting board, put a herring on it and make a cut in the abdomen with a sharp knife. It is more convenient to cut the fish from the head towards the tail, and make the cut not in the center, but half a centimeter higher.

Step 2

Remove the insides through the cut. Try to pick up and gently pull on the black film lining the inside of the herring belly. If this can be done, the insides will be removed along with this film. If the film breaks, simply scoop the insides onto the paper with a knife.

Step 3

Separate the herring head from the carcass along with the front fins. Cut off the very bottom of the abdomen where the fat and fins are. The paper can be thrown away with the insides.

Rinse the gutted herring under cold water. Remove the rest of the film from the abdomen.

Place the herring on a cutting board and make a cut along the back so that the fish begins to split in half. In the process of cutting, remove the dorsal fin along with the bones that are attached to it.

In the same way, make an incision in the lower part of the carcass from the belly to the tail. When making an incision, remove the fin and bones.

Step 7

Remove the skin from the herring. This can be done by hooking the edge of the skin at the beginning of the cut on the back of the herring. Pull gently towards the belly and tail.

Step 8

To remove the herring from the bones, make an incision in the middle of the side to the ribs. Slide the meat off the belly so that the bulk of the ribs remain on the spine. Several bones stuck in the fillet can be removed manually. Do the same operation, turning the herring over on the other side.

Step 9

To remove the back from the bones, simply insert the knife between the fillet and the spine. The fillets can be separated from the bones with your fingers.

Step 10

In order to remove the remaining half of the back from the bones, try to hold the meat and pull the spine out of it. It is most convenient to do this in the direction from the head to the tail.

Step 11

It is more convenient to remove the remaining small bones by bending the fillet strips with the inside outward. This makes the bones much more visible and can be removed with tweezers.
